Red pepper couscous for 1
Any time I want something healthy, really quick and filling, I always go for couscous seen as it only takes about 5 minutes.
Half a cup of couscous to a full cup of boiling water (depending on how much you want)
1 - 1 1/2 tbsp olive oil
Half a small onion
1 small pepper
1 garlic clove
1 small chilli
2 tsp Balsamic vinigar
Salt
Pepper
1/2 tsp Paprika
1 tsp dried Oregano
1 tsp dried Coriander
Parmazan
First of all boil the kettle. Put the couscous into a bowl and pour the boiling water on top cover with a dish and leave until needed.
Dice the onion, chilli, garlic and the pepper into small cubes. Sometimes I like to add a few olives and cherry tomatoes, if you want to, dice these small too and get rid of the tomato seeds.
In a frying pan heat up the olive oil, add the onions and chilli, sautée until the onions are almost soft and add the garlic, pepper, seasonings and salt and pepper to taste, stir and add the balsamic. Cook for a couple more minutes. Grate in some parmazan, add the couscous and stir until it is covered with the all the lovely flavor.
All done!
I like to grate a little bit of parmazan on too or if I have it I add a dollop of cream cheese or cottage cheese.
