Bear with me

Sorry I haven't been posting recently but I am excited to say, my sister and I are starting a fresh new blog and we are super excited about it!! We have so many ideas and ready posts to show you all and we are just waiting to get everything right!

Best Ever Wedges


Wedges


These wedges are the perfect accompaniment to quite a lot of dishes. My family and friends love them and always ask me to make them with pretty much anything we make, hopefully you will love them as much as we do.



Ingredients

Potatoes, cut in to wedges
1 tbsp flour
1 tbsp semolina
paprika
cyenne
salt
pepper
cumin
rosemary
thyme
olive oil




Put the wedges of potato on to a baking tray, drizzle lightly with oil and sprinkle with all the ingredients adding as much or as little of the flavourings as you would like. I use about a tsp of each and half a tsp of salt, you can always add more salt after. mix it all together using your hands making sure that each wedge is covered in the seasoning and oil. drizzle a bit more oil on top and put in an oven about 200 Celsius. Apologies for the pictures they were taken when it was dark outside and I had to use my kitchen light. Turning halfway through, cook for 30 mins or until medium brown and crunchy on the outside. they should be lovely and fluffy on the inside.

BIRTHDAY CAKE!!

Happy Birthday!!

 
It was my Sisters birthday a couple of weeks ago and I didn't have much time to make her a cake, so the day before, I made this chocolate bunt cake and on the day, made the Choux pastry and filled them with fresh whipped cream. I thought I could show you that even if you don't have much time that you can still make quite a pretty cake for either a man or woman (maybe not the bunting with the mans) and everything looks good with icing sugar sifted on top!

The cake is a simple chocolate cake 200g of sugar and butter, 150g self raising flour (or plain flour with a couple of tsp of baking powder), 50g of cocoa and 4 eggs. Mix it all together and cook for about 30-45 Min's until a cocktail stick comes out clean.

Make some choux buns, there are many good recipes on the net you can use and fill with fresh whipped cream. I whip mine up with about 50g of sugar and a drizzle vanilla extract.
 
 
 
 
Bungalows and Bears for a burger and drinks, New India Garden for a delicious curry, York for a nice day christmas and birthday shopping and back down to London for a couple of days then to top it off re-living the days of our 15 year old emo selves, seeing Papa Roach to top it off! Happy Birthday T, I had so much fun! I hope you did too!

Pancakes!!


Good Day Off
 
 
One of the easiest things to do in the kitchen, is Pancakes! You can have them with anything! This is how I had mine today!
 
 
Ingredients
200g self raising flour
100g butter
Pinch of salt
2 eggs
Enough milk to make a thick batter
 
Your choice of fruit and yoghurt or whatever you want on top, golden syrup,  maple syrup whatever you like!
 
Sift the flour in to a bowl and stir in the sugar and salt. Make a hole in the middle and add in the eggs, whisk gently to incorporate the flour at the sides. When it starts to get stiff add milk bit by bit to make a thick batter, at this point if you want some fruit into the mix itself add this now, today I added blackberries! Stir in to incorporate.

Heat up a heavy based pan grease and drop a couple tbsp's of mixture to the size of pancake you want, you can make a couple at a time. Wait until bubbles start to form on top of the pancake and start to pop then turn over until light brown in colour. Top with whatever you like and your done! I ran out of yoghurt today and only had a Muller Corner left so I just used that on mine with an apple.

Roast Butternut Squash, Carrot and Red Onion Soup

With broth being at the top spot, this may be my joint second favourite soup (I find it hard to choose!) and love making it! Its so easy you probably wont even need this recipe after you've made it once! It's always a good choice and for these cold days recently and even colder to come, (sobs slightly but is happy to wear my winter clothes :) and eat this delicious soup) It's perfect to come home to after a hard, busy day of Christmas shopping or worse... work!


Ingredients
1 Butternut Squash, peeled and medium diced
3 Carrots, washed and medium diced
1 Large Onion, peeled cut in half and each in to 4
2 Celery Sticks
1 Medium Leek
Salt and Pepper
Paprika
Chilli Powder
Dried Coriander (and fresh if you want to garnish)
2 Chicken or Veg Stock Cube
 
Parmesan 
Garlic Bead
 
 
This makes a lot of soup. I like to take some to work to make me feel at home in a cold, overly bright office and its also good for portioning up and freezing if you want a meal to hand. 

Start off by lining two baking trays with greaseproof paper or baking paper and evenly distribute the butternut, carrots and onion. Drizzle with olive oil (about 1 and 1/2 to two tablespoons each tray) sprinkle with salt and pepper and shake on as much spice and dried coriander and you like, it's all to your taste. As you may know by now I love mine hot so I tend chop up a chilli and add it when I cook the leek and celery. 
 
Cook these on 200°c for about 20-30 mins or until they are browning and just catching on the edges.
 

 
 
Whilst the veg is in the oven you can chop the leek and celery. Roughly chop both because everything will be whizzed up at the end.  Add both to a pan and add a glug of olive oil. Cook them down until both are soft.
 
Put the kettle on and unwrap the two stock cubes, add the roasted veg to the leeks and celery. mix everything together still on the heat and then add enough water to cover the veg and add the two stock cubes.
 
this is where I add more water to loosen the soup up, so its not just a big gloopfest. so I add enough to what I like. after one or to times of making this you will know how much you like and what consistency to make it to.
 
 
 
 
 
After adding the water, keep on the heat for a further minute and then remove. I use a hand held whizzer, but you can use a blender or if you have neither,  it works just as well to use a potato masher. After mashing return to the heat and just bring to a simmer, then its ready!
 
I like to have it with a bit of grated Parmesan and garlic bread. and put some fresh coriander on top when I have a bunch At home.
 
 

 
 
 I had this garlic bread left over from a party the night before, these are from Aldi and are delicious!! but if you want to make them yourself, just make a garlic butter, chop up one or two cloves of garlic add to about 50g of butter and add about a table spoon or more of mixed herbs or oregano and spread on to some cooking bread, or a slice of bread. toast until golden and toasted! YUM!
